deep-fried calamari with almonds

a lovely little appetizer from The Encyclopedia of Italian Cooking, Reader’s Digest Books. i wanted to taste the difference when almonds are added into the breading mix…it enhanced the squid’s sweetness and added crunch and munch.

calamari fritti alle mandorle

1/2 cup all purpose flour

salt and freshly ground pepper to taste

2 large eggs, beaten

1 cup fine dry bread crumbs

1/4 cup finely chopped almonds

vegetable oil for deep- frying

1 lb. calamari bodies, dressed/cleaned, cut in 1/2 inch wide rings

parsley, optional

lemon wedges to serve alongside

place flour, salt, pepper in a bowl and blend well. put the eggs into another bowl, and the bread crumbs and almonds in a third bowl.

pat calamari dry then dip into the flour, then into the eggs, and lastly into the bread crumb and almond mixture.

deep fry in hot but not smoking oil (about375F) until golden brown about 4-5 minutes.   drain on paper towels.  garnish with parsley if using, and sprinkle with lemon juice.

i like to dip calamari in marinara sauce with a little piece of pickled jalapeno before i pop it into my mouth.

    I love calamares and that variation looks superb. (My own recipe incorporates grated Parmesan and minced basil with the breading.) :kitty:

    :thumbsup: OMG, cook something seafood, and I’m there!! Nakakagutom naman. Jade and I love fried squid. Love it with marinara sauce too, but never tried it with jalapeno slice. Will have to do that next time.

    Stel, sarap naman niyan, laluna at may almonds pa. Mai-try nga minsan, laging plain calamare lang ang naluluto ko meaning iyong breadcrumbs at egg lang ang halo (hehehe). Pwede ring i-substitute ang iba’t ibang nuts para naman magkaroon ng crunchiness talaga. Tagal din akong di nakadalaw at itong PC monitor ko nagluluko, kabagu-bago, kainis.

    I buy it carryout from a restaurant up the street. They may use frozen, but they like to do a lot by scratch, so I doubt it. I’ve only used the TJ’s frozen for tempura, and I can’t recall if I tasted much flavor or not, hahaha.
