“The Best Brownies Ever”
this time from King Arthur Flour.
what to do, when your three kiddies request brownies over and over? bake the same recipe again and again? nah… (i hate monotony so!). i kept testing a different recipe each time, but now #2son has demanded that the King Arthur version be the keeper.
in fact he was quite upset when i misplaced the clipping from the flour bag and helped me shuffle through the print-outs and cut-outs in the burgeoning pile collecting in the folder.
i didn’t realize that my favorite part of the brownie is the thin papery crust on top, until i read about how to achieve it in this recipe.
guaranteed to please your inner brownie monster–for moist, dark and fudgy, i like to use Dutch-processed cocoa.
The Best Brownies Ever, from King Arthur Flour:
1 cup (8 ozs.) salted butter
2 & 1/4 cup sugar
1 & 1/4 cups Dutch-processed cocoa
1/2 tsp. salt
1 tsp baking powder
1 tbsp. vanilla extract
4 large eggs
1 & 1/2 cups (6 &1/4 ounces) unbleached all purpose flour
2 cup (12-oz. bag) chocolate chips
preheat the oven to 350F. lightly grease a 9 X 13-inch pan.
in a saucepan set over low heat, melt the butter, then add the sugar and stir to combine. return the mixture to the heat briefly, just till it is hot, but not bubbling. it will become shiny looking as you stir. heating the butter and sugar a second time will dissolve more of the sugar, which will yield a shiny top crust. transfer the mixture to a mixing bowl.
stir in the cocoa, salt, baking powder,and vanilla. add the eggs, beating till smooth; then add the flour and chips, beating till well-combined. spoon the butter into the prepared pan.
bake the brownies for 28 to 30 minutes, until a cake-tester comes out dry (though it may have a few crumbs clinging to it). the brownies should feel set both on the edges, and in the center. remove from the oven and after 5 minutes loosen the sides with a table knife. this helps the brownies from sinking in the center as they cool.
cool completely before cutting and serving.

this is exactly similar to my fave recipe and i always eat the crust first.. thats exactly how my crust look but i can test this am craving for sugar

Yummy! I have been looking for a recipe for this kind of brownie. Thin crisp crust on top and chewy edges. Just like what was for sale in my grade school cafeteria.

Can’t wait to try this recipe! A coworker used to always bake brownies like these for our many bake sales … she brought them in the most banged up, crummy looking pan I ever saw. They were so outstanding, melt in your mouth delicious, and she would not share her recipe. Needless to say they sold out as fast as we could cut and plate them!! I have a feeling the pan had a lot to do with the special crusty quality of her brownies, but I will be baking some tomorrow
after I pick up a some Dutch cocoa. Thanks so much for this recipe.

Thanks for posting that King Arthur recipe! I made it a few months ago and stupidly threw out the flour package. King Arthur doesn’t seem to have it on their website. But lo and behold, I googled and there it was, on your blog! :)

Wow! These brownies are wickedly delicious. Made them yesterday. It was my first time to bake brownies from scratch. They came out perfect! Looked just like yours. My 4-year old son loves them so much. He began eating 5 minutes after the brownies left the oven. He loves the gooey chocolate chips. He described it as wet brownies! My husband loves them as well, he asked me to pack some for his baon today. I love your site! I visit everyday. I just did not have the guts to try. Now, this looks promising… I will try the kakanin today! Just bought some black glutinous rice last night…
