apple cake


i stumbled upon this apple cake from nami-nami, and instantly knew i had to try it out. she has step by step instructions. it’s a lot easier than apple pie i think :) .
this is a small cake, 8-in round, easier if you use a springform or loose-bottomed tart pan but i used a souffle dish and it worked out very well–just grease it generously with butter.
it is being dispatched quickly even as i type….

adapted from nami-nami’s apple cake

batter:
3oo ml. all purpose flour, sifted
1/2 tsp fine salt
2 tsps. baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cardamom
100 ml sugar
1 egg
50 grams of melted butter
100 ml whole milk
2 large apples, cored and cut into small cubes

crumb:
50 ml brown sugar
2 tbsps. all purpose flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cardamom
2 tbsps. butter

preheat the oven to 400F.
mix the flour, salt, baking powder, spices and sugar. mix the butter, milk, and egg, pour into the dry mixture and mix.
fold in the apple cubes. pour the batter into a buttered 8-inch cake tin, preferably springform or loose-bottomed.
mix the crumb ingredients, cutting butter into the mixture with 2 knives or a pastry blender.
bake for 30-40 minutes, until a toothpick inserted in to center of the cake comes out clean and the cake is a nice golden brown.

cool slightly at least 15 minutes. we served ours plain and it was fancy-tasting enough! but if you like serve with a drizzle of whipping cream or a scoop of vanilla ice cream.

    Hmmm, looks like the season for apple bakes! :apple: We just made some apple crumble (similar to your apple crisp) and was scheduled to make a cake like yours as well. :cheerful: How’s the snow coming? ‘Hope you’re not too cold there.

    celiaK, help!!!!
    it was 20F (about -7C?!) last time i went out…grabe! terrible! horrible! i look at husb sometimes incredulous…why are we here again? who said it’s livable here?

    haaaaaaaay. so baking in the oven is comforting…:stirthepot:chef:
    my apple monster is already wishing for lots more…must double the recipe (at least)! i wish our two monsters can meet someday:lol:
